There are ways to make stinky food taste good and a whole science behind it as well. As far as I know, the main thing to keep in mind is to work WITH the flavour rather than against it.

For instance, one thing I learned is that Herring smells bad if raw, but stops producing odor if dried. Then, you rehydrate them with marinade to make a great dish.
